Shortcut Homemade Tortilla Chips

Ingredients

A package of fresh corn tortillas, organic if you can find them, and about 4 inches in diameter.

What To Do

Pre-heat oven to 350°F. Cut tortillas into eighths.

Lay out in on layer on a rimmed baking sheet, using your best Tetris skills.

Bake at 350°F for about 12-20 minutes, until they are crispy and just starting to brown.

Notes and Talking Story

  • ​Resist the urge to take them out early because they will be gummy.
  • Skip the oil and spices, these plain nekkid chips have plenty enough crunch and flavor.
  • A rimmed baking sheet means your fresh crunchy chips won't accidentally slide off and get sacrificed to the lower heating elements if you take them out too fast. Trust me on this one.
  • Portion control is a great reason to make your own.
  • I can easily go through half a bag of store-bought chips without thinking. Now I know that when I've eaten 8 chips, it's an entire tortilla, and I feel much fuller.
  • Keeps for at least three days in a Tupperware.​​
