Ingredients
Our Preferred Mix-ins
1 box (18 ounces) Rice Chex or Corn Chex 1 box of Honeycombs (16 ounces) 1 package of pretzels (12 or 16 ounces) Other Options Crispix or Cheerios instead of Honeycombs Fritos or Bugles instead of pretzels |
Seasoning
1 stick of butter (½ cup) ¼ cup white sugar ½ cup canola oil ½ cup Karo light corn syrup 2T shoyu 1 bottle nori furikake (1.7 ounce size) |
What To Do
Pre-heat oven to 250°F.
Dump cereal into a roasting pan that is big enough to mix gently without crushing or overflowing. Our Thanksgiving turkey pan is our go-to vessel.
Combine butter, sugar, oil, corn syrup, and shoyu over medium heat in a small saucepan. Stir just til the butter melts and all the ingredients are mixed together. Do not boil.
Pour over cereal and toss gently. Sprinkle furikake evenly and mix again. Gently.
Bake at 250°F for 1 hour tossing every 20 minutes to coat uniformly, and to prevent it from becoming a huge piece of furikake chex mix brittle.

Notes and Talking Story
- Base ingredients are two full boxes of cereal, plus pretzels, so it will produce a large quantity of snack mix. Think about who you want to share it with.
- It is important to use the larger sized (supermarket-size, not Costco) boxes of cereal. Otherwise you'll end up with a super-salty, oversaturated mix. Alternately, you might use three smaller boxes and have a more cereal variety.
- In addition to the cereal and crunch options listed above, other varieties include adding peanuts or kaki mochi.
