Laurie's Guacamole

Great guacamole is simple and quick with fresh ingredients. Garlic, lime, and jalapeƱos together make guacamole sing.

Ingredients

3-4 ripe avocados
2-3 cloves garlic, very finely chopped
A handful of cilantro leaves
1 jalapeño peppers, seeded and finely chopped
¼ of a red onion, finely chopped
Juice of 2 limes
Hawaiian salt, to taste 

What To Do

Pit the avocados and scoop meat out into a mixing bowl. Add garlic, cilantro, jalapeño and red onions. Squeeze the limes over everything.

Wash your hands. Mix all ingredients by hand. Upon mixing, you will be made painfully aware of any small nicks or minor cuts that your hands may have, but it is well worth it to control the texture.

​Plus, it's kinda fun. Wash your hands and sprinkle a pinch salt over guacamole, and then mix, this time with a spoon. If not eating immediately, lay plastic wrap over the surface of the guacamole, minimizing any air pockets, and refrigerate.

Notes and Talking Story

  • I grew up with a huge avocado tree in the backyard, but ironically never learned to make guacamole 'til long after I moved away. I did have my fair share of green avocado jelly concoctions!
  • ​Take a light touch with adding salt at the end, because whatever you eat with the guac will also likely have salt in it.
  • If you like spicier guac, add a second jalapeño.
  • You can substitute the juice of 1 lemon for the 2 limes as a second option.
  • ​Guacamole is now my responsibility at family functions, Thanksgiving, Christmas, Easter, Superbowl and hockey. 
  • Both my children swear by this recipe and now make it for themselves.
