Fresh Corn Salsa

Nothing beats fresh corn. Its sweet, super-crispy bite shines here, with just five simple ingredients.

This salsa pairs well with Crock Pot Kalua Pig, really any kind of pork, or fish tacos.

Ingredients

3 fresh ears of corn
1/2 red onion, finely chopped
1-2 jalapeno peppers
Juice of 2 limes, or one lemon if you are in a pinch
At least two handfuls of cilantro, finely chopped
Hawaiian salt, to taste

What To Do

Grill or cook corn and cool.

​Cut the corn off the cob. Dice everything else together and mix.

Add salt to taste. If possible, let it sit for about 30 minutes to let the flavors mix and soak in.

Notes

  • Do not recommend substitutions for fresh corn. Swapping in canned or frozen corn works in things like Spanish rice or Chicken Tortilla Soup, but don’t even think about here.
