Almond Float Made Modern

Almond Float is a go-to Hawaii potluck dessert. White almond-flavored jello swimming in canned fruit cocktail. Admit, you liked it, and always tried to pick out your favorite fruit, and the lone cherry of the can.

Well, this was long due for an update. This is a fresh take on a cherished island-style favorite.

Ingredients

Almond Float Part
1 envelope unflavored gelatin
½ cup water

​½ cup of evaporated milk
(Most of a 5 ounce can, use the rest in your coffee)
½ cup of sugar
1 cup of water 
2t almond extract
Suggested Fruit, Add Separately or Mix and Match
Fresh raspberries and blood oranges (or any oranges)
Fresh strawberries, hulled and sliced in half
Mangoes or fresh peaches, cubed
Starfruit, sliced to look like stars
Mandarin oranges, OK, these can be canned

Mint leaves, cut to ribbons or full leaves (optional)

What To Do

To prep, soften gelatin in ½ cup of water. It will look gross and goopy. Don't worry.

Heat milk, sugar and 1 cup of water in a small saucepan and bring just to boiling. Stir in gelatin/water mix until completely dissolved and smooth. Cool slightly and stir in almond extract.

Pour into an 8" x 8" pan and refrigerate to harden. Cut into 1" squares when hardened.

Spoon almond float into a bowl. Add fruit of your choice and toss gently. Add mint ribbons or leaves as garnish

Notes and Talking Story

  • I've always been amazed at what can be created with Jello and gelatin. These desserts are so part of my childhood as well as favorites for my kids and their friends.
  • I have been known to sprinkle homemade granola and add fruit to have this for breakfast.
