Stone and Berry Cobbler

One of my favorite flexi-recipes that makes for a sublime breakfast or dessert. Simple, flexible, and consistently ono.
Summer fruits in season shine true in this cobbler. Peaches, nectarines, plums, apricots, and even cherries work equally well as the stone part. Then add your favorite berry.

Ingredients
¾ cup flour
1t baking powder ¼t salt ¾ cup sugar 4T butter ¾ cup milk (non-fat is perfectly fine!) |
3 big peaches or nectarines or 4-6 apricots,
pitted and sliced, skin on is OK ½ of a 6-ounce carton of blueberries, 2-3 handfuls |
What To Do
Pre-heat oven to 350°F.
Mix dry ingredients together in a mixing bowl. Melt butter in a small dish and mix into to dry ingredients. Add milk and mix until flour, sugar, and milk are well mixes. The batter will be very runny and there may be small clumps of butter if the milk is really cold, but don't worry.
Pour batter into an 8" x 8" Pyrex baking dish and scatter the fruit into the batter. It will look like a mess. Have faith.
Bake at 350°F for 50-60 minutes.
As if by magic, the top will be sticky-crunchy and the bottom will be warm and buttery. Leftovers will be less than camera-ready, but still delicious, especially with a quick microwave to re-heat.

- We make this a lot in the summer.
- That 1t of baking powder is vitally important. The texture is gross and icky without it. Please take our word on this.

- So many options!
- 4-6 plums (skin on) and a handful of sliced strawberries.
- 4-6 apricots and a couple handfuls of raspberries.
- All berry: a handful of sliced strawberries, a handful of blackberries, and a handful of blueberries.
