todd's biscuits

Eat hot, plain, or with butter and jelly (Anna's Raspberry Freezer Jam, for instance). Equally yummy at breakfast with eggs and sausage or at dinner with My Very Own Chili or Teddy Bear Chicken Soup.

They're crunchy/buttery on the outside and steamy/soft on the inside. Todd says the whole thing hinges on *not* melting the butter.

2 cups flour
2 1/2t baking powder
1t salt
6T cold, unsalted butter, cut into pieces
1 cup milk

Mix baking soda and salt into flour. Cut butter into flour. *Do not allow the butter to melt or to form a paste with the flour.* Add milk and mix lightly. Use a small spoon to scrape the batter onto a baking sheet, spacing 1 1/2" apart.

Bake at 450 degrees for approximately 12 minutes.
