Todd’s Ridiculous Scones

Everyone who has had these absolutely loves them. Most importantly, my mom requests them whenever I go home to Hawaii. 

We have never bought scones since my favorite husband started making these.

Ingredients

2 cups flour
⅓ cup white sugar
½t salt
1t baking powder
½ ​cup dried cranberries
1 ¼ cup heavy cream
Cinnamon and white sugar (for dusting)

What To Do

Preheat oven to 400°F.

Mix all dry ingredients together. Mix in the cranberries.

Add heavy cream and mix together with a fork. Roll out to an 8-9" circle.

​Top with a bit of heavy cream and dust with cinnamon and sugar. Cut into 8 pieces (like a pie).

Bake at 400°F for 12-15 minutes.

Notes

  • Cranberries remain the favorite, but from time to time, dried apricots, or dried cranberries with pecans make for a nice change.
  • For people like me, who love sleeping in, this is also something you have a hope of making during the breakfast (OK, brunch) time window as it’s pretty quick to put together.​
