A Chamorro (native peeps of Guam) dish, this is my friend’s-wife’s-mom’s recipe. True to best source for ohana recipes, we had it a summer volleyball picnic.
A super-fun, flexible mix of flavors and textures to eat solo, in lettuce leaves, or with tortilla chips.

Ingredients
About half of a cooked chicken, shredded
Juice of 2-3 lemons or limes (I like a strong citrus, so I use 3 of whatever I happen to have on hand) 1 small onion, finely chopped or grated A few handfuls of grated unsweetened coconut 1T salt |
A few handfuls of grated carrots
Green onions, finely chopped 2 jalapeño peppers, seeded and finely chopped Corn tortillas or corn chips |
What To Do
Juice the citrus fruits and mix with chicken. Add onion, grated coconut, and salt to taste, pressing the mixture together.
Add carrots, green onions and jalapeno peppers. Mix well and let it stand about 30 minutes. Serve with tortillas

- I love this recipe's flexibility. You can be confident that with great ingredients, you'll put together something yummy and to your taste.
- Go easy on the hot peppers if you’re not feeling hot and spicy. Add more carrots if you are feeling sweeter and crunchy. My sister doesn’t like coconut, so she uses less.
