3 cloves of garlic, finely chopped 1 package (1 pound) of ground beef or turkey Drizzle of olive oil 1 onion, finely diced 1 can (15 ounces) of corn, drained 1 red pepper, diced 1 can (28 oz) diced tomatoes 3T cumin 2T chili powder 3 bay leaves ½ t cayenne pepper Fresh cilantro chopped |
Taco Components, Your Choice
Tortillas, corn or flour Cilantro, chopped for garnish Diced fresh tomato Grated sharp cheddar cheese Guacamole Salsa Shredded Lettuce Sour Cream Spicy black beans Spanish rice |
What To Do
To prep, chop garlic, onion, red peppers, and cilantro. Make sure you have the taco components of choice
Use just enough olive oil to coat the bottom of a pan. Add garlic and ground meat.
As the meat starts to brown, add chopped onion and cook until it wilts and starts to caramelize. Add corn and peppers. Add tomato sauce and spices and simmer well, until the liquid is nearly evaporated.
Build tacos and eat.

- Leftover meat can easily be used to make nachos, particularly if you add a can of black beans to the mix.
