Chicken Salad Sandwiches or Wraps

Leftover chicken, dried cranberries, nuts and mayo are the base for this flexi chicken salad.
Excellent as sandwich, a wrap, or a chunky spread for crackers.
Ingredients
Leftover chicken (Costco or roasted) or even turkey
A handful of dried cranberries or more, to your liking
A handful of pecans, cashews, pistachios, almonds or mixed nuts
Mayonnaise
Salt to taste if necessary
Black pepper to tast
Your favorite bread
Lettuce
Tomato slices
Optional
1 stalk of celery, finely chopped.

What To Do
Mix everything together, including chopped celery if you are using it, and add mayonnaise to hold it all together. Add salt (if necessary) and pepper to your taste.

Notes and Talking Story
- Equally good wrapped or toasted as a quesadilla.
- A great way to use leftover Thanksgiving turkey.
- I use mixed nuts from Costco, which includes pecans, pistachios, almonds and cashews, and no salt.
- No one in the house likes celery so I have (grudgingly) made it optional.
- Another great flexi recipe.
- Don't have dried cranberries? Swap in raisins, currants, or even chopped up dried apricots.
- Allergic to nuts? Consider adding sunflower seeds or pepitas (pumpkin seeds).
