Microwave Jello Mochi

Get your head around the incongruence of Jello, mochi, and microwave because in 15 minutes you can have soft, sticky fresh mochi that is pretty to boot.

Ingredients

Cooking spray
​1 cup boiling water

1 3oz box of Jello, your favorite flavor that is red, orange or green
⅓ cup of white sugar
1 cup mochiko
1t vanilla extract
About ½ cup katakuriko (Japanese potato starch)

What To Do

Spray the inside of the mochi pan with cooking spray.

​Dissolve jello in hot water and stir well. Add sugar, mochiko and vanilla and mix until smooth. Pour into a microwave mochi pan that has been sprayed with Pam. Cover the top with microwave-safe plastic wrap microwave on high for 5 minutes.


Take out, remove plastic wrap and cool completely. Flip mochi out from the pan and put it on a pre-dusted dish. Using a serrated plastic knife (like the kind that comes with plate lunches), slice into 1/2-inch wide pieces. As you slice, roll in katakuri and shake off excess.

Store in an airtight container, with parchment paper between the layer of mochi if you are stacking them, and eat within about four days.


Notes and Talking Story

  • It takes me 15 minutes start to finish to make this. That includes using a stool to get my plastic wrap, invariably unsticking the plastic wrap, searching for my microwave mochi pan and pyrex measuring cup (for the hot water), and getting all the ingredients together.
  • Most people are much more efficient, and can be done in 10 minutes.
  • Microwave bundt pans are similar to angel food cake pans and have a removable center. (see pic)
  • You can buy them at Japanese grocery stores like Marukai or Don Quijote in Hawaii. Oddly as of 2022, I couldn't find them on Amazon.
  • Be aware of Jello's colors. For example, grape-flavored Jello mochi sounds great, but looks like concrete so no one will eat it.​
