When I go home to Hawaii, my mom often makes maze-gohan (mixed rice).
My version has a little less salt, and shredded carrots to bring some sweetness, color and crunch in.
Takes advantage of the absolute convenience of packaged and shelled edamame. Because I'm lazy.

Ingredients
2 (rice cooker) cups of Japanese short-grain white or brown rice
1 bag of shelled edamame About half a bag of shredded carrots |
Your favorite furikake
OR Shredded nori (vegan option) Optional Protein Baked or smoked salmon Fried egg |
What To Do
Cook rice in rice cooker. Dump all of the hot rice into a serving bowl.
Microwave edamame and mix with rice. Mix in shredded carrots in proportions that you like.
Sprinkle furikake and mix together to taste.
If adding salmon, mix in at the end.
If adding a fried egg, lay it over the rice as a last step.

Notes and Talking Story
- Maze gohan literally means mixed rice. It is down-home, casual Japanese home cooking at its finest.
- Works as a one pot meal if you add salmon or an egg.
- We usually use a combination of Koda Farms new crop rice and Sukoyaka Genmai brown rice.
