Peanut Butter Beer Miso Chicken

This is my absolute favorite chicken. My favorite husband has grilled this in the rain in the middle of November in the dark because it’s so good. The ingredient list seems very random, but it comes together spectacularly.

Ingredients

¼ cup shoyu
¼ cup of your favorite beer
¼ cup white miso
¼ cup smooth peanut butter
¼ cup brown sugar
​3 cloves of garlic, finely chopped
2 packages of boneless/skinless chicken thighs
(8-10 pieces)

What To Do

Mix everything together and marinate, ideally overnight, but at least a full afternoon.

Grill while drinking the rest of your beer.

Notes and Talking Story

  • ​Grilling is the way to go. Don't mess around with baking or stove cooking. 
  • ​The original recipe included quite a bit of fresh grated ginger that gave it quite an edgy flavor, so I nixed it.
  • Smooth peanut butter makes for a better marinade, but crunchy will work in a pinch.
