Mayonnaise Chicken

All-American comfort food from my childhood.

My mom made this instead of fried chicken. The color of the cereal makes it look like fried chicken and the mayonnaise and cereal combo give it a fantastic crunch.

Ingredients

1 package of boneless, skinless chicken thighs (4-6 pieces)
3-4 dollops of mayonnaise
About 3-4 handfuls of Corn Flakes, smashed up

Optional
A handful of Parmesan cheese

What To Do

Pre-heat oven to 350°F and line a baking pan with foil.

Put mayonnaise and crushed cereal in two separate shallow plates or bowls. Mix Parmesan cheese in with the cereal crumbs if you choose to use it.

Coat chicken with mayonnaise. Dredge in cereal crumbs.

Put chicken on foil and bake at 350°F for approximately 45 minutes

Notes and Talking Story

  • I do not use pre-packaged corn flake crumbs because you get a crispier texture by a coarse smashing. And it's therapeutic to smash corn flakes.
  • Plain Special K will also work.
  • In 2016, Kellogg's unfortunately discontinued Product 19, my all-time favorite cereal for this chicken and for Chicken Divan.
