Homemade Spaghetti Meatballs

Baking meatballs en masse means enough to freeze for another day.
The panko/parmesan combo gives a good crunchy bite, and good ole' mayonnaise gives them a little more flavor depth and keeps them from drying out.

Ingredients
1 package of sausage (Italian, Jimmy Dean pork, or Homemade Pork Sausage), about one pound
1 package of ground turkey, about one pound
½ cup panko or your favorite bread crumbs
¼ cup or slightly less, Parmesan cheese, to your taste
About 2t parsley (fresh or dried) to your taste
About 1t oregano (fresh or dried) to your taste
2-3 cloves garlic, finely chopped
Black pepper to taste
1-2 good dollops of mayonnaise
1 package of ground turkey, about one pound
½ cup panko or your favorite bread crumbs
¼ cup or slightly less, Parmesan cheese, to your taste
About 2t parsley (fresh or dried) to your taste
About 1t oregano (fresh or dried) to your taste
2-3 cloves garlic, finely chopped
Black pepper to taste
1-2 good dollops of mayonnaise
What To Do
Pre-heat oven to 350°F.
Mix turkey and sausage together in a large mixing bowl. When they are well-blended, add panko, Parmesan, parslely, oregano, garlic and pepper until all are well incorporated. Add 1 dollop of mayonnaise to start, and if it is looking a little too dry, add the second. The "meat dough" should be a bit sticky, the consistency of pre-cooked meatloaf.
Form into a two-bite sized meatball, slightly smaller than a walnut in its shell. Line up meatballs on a broiler pan and bake at 350°F until browned, about 35-40 minutes total, turning them once in awhile to get them a uniform color.

Notes and Talking Story
- I like tiny meatballs, about a two-bite size because I like more outside crunch to the meatball. My husband makes larger, more bambucha-sized ones that are slightly larger than a golf ball, and these can take a little longer to cook throughout.
- Using hamburger instead of ground turkey makes a richer meatball, and so reduce mayonnaise to 1 dollop.
- Serve with Simple Tomato Sauce and your favorite pasta.
- Sourdough or asiago cheese bread crumbs work well too.
