pan fried petrale sole

Sole fillets cook really fast; less than five minutes. You can serve this with fresh, quick-cooked summer veggies-add garlic to mushrooms, zucchini, red peppers, and sweet onion. The veggies will take longer to cook than the sole, so start those first. 

Another favorite is adding fresh fruit salsa, or a fruit salad with a little lemon juice and mint.

Petrale or Dover sole fillets
1-2T butter
Hawaiian salt and black pepper, to taste
A bit of flour
1 lemon

Fresh parsley, finely chopped (dried OK too)


Mix together flour, Hawaiian salt, and pepper. Dredge fillets in flour mixture. Saute in in butter until golden. Flip once. Squeeze lemon over cooked fish. Sprinkle with parsley.
