I started with a Martin Yan recipe for lemonade and wanted to convert it to shave ice or at minimum, slush. The canned version makes an icier shave ice than watermelon shave ice, and has good lychee flavor, but is a weird texture. I also didn't like have little bits of mint floating in it.
The fresh version works much better, but it is difficult to get lychee juice. I fully admit that I have a 'connection' for this--a friend of mine whose parents have a lychee farm on the Big Island, but you can buy lychee in the summer in Asian grocery stores.

Canned Directions
Toss lychee and syrup into a blender until it's uniform. Throw in the lemonade concentrate and water. Just pulse it a few times to mix it. Mix in chopped mint. Dump it into a 9 x 9 pyrex pan and freeze it for at least 2 hours. Take out when partially frozen and break it up a little with a wire whisk. Freeze again for another hour or so.

Sun Tea In the morning, set two Tazo passion tea bags into a quart jar out in the sun. Let them sit there all day. Carbon footprint = 0, and cost = about $0.50, vs. $3 at Starbuck's. Lychee Lemonade Juice lemons directly into lychee juice. Add 4 cups of water. In a separate bowl, muddle the mint leaves. This is just a fancy way of saying, "Smash them up so they release their smell and flavor." I used the rounded handle of a non-wooden spoon. Pour some of the mix into the muddle bowl and then strain it back in, using a colander to avoid the previously noted undesirable mint bits. You may have to muddle the leaves in a few batches, depending on how minty you like the flavor. To assemble, fill a cup with ice. Pour in lychee lemonade, then the passion ice tea and voila! a good summertime drink that just looks so pretty too. |
NOTES:
Use a blender instead of the food processor. Too much liquid for the food processor. Makes a big mess!
Needs to freeze initially for 2-3 initially to get solid enough.
Consider using slightly less lychee syrup.
