watermelon shave ice

Being a Hawaii girl, I adore shave ice. Passionately. For years now, upon arrival at HNL, we go directly to Baldwin's from the airport, and it's the last place we go on the way back to the airport to fly back. My addiction is so bad that the Baldwin's folks see my kids and me and say, "Oh, you're back, how long are you here for this time?" 

Now every ex-pat Hawaii person knows that "mainland" shave ice just isn't quite right. Too crunchy, too icy, no li-hing mui, lychee or lilikoi flavors. Watermelon shave ice comes pretty close to the texture and flavor of shave ice. Best of all, it's not even ice, and you don't need the fancy machine to make it.

Half a seedless watermelon, sliced into big chunks
A little less than 1/3 cup sugar
Juice of a lemon
Juice of a lime

Put everything in a food processor and let it rip until it forms slush. It should still have a little texture to it. Pour into a 9 x 9 glass pan and freeze for about an hour. Take it out--it should be only partially frozen. Using a wire whisk, break it up a little bit, so it's getting slushy. Toss it back into the freezer for about another hour. Repeat the breaking up with a wire whisk, serve and swoon.
