ung choy with shoyu-mirin sauce

Simple tasty food from my mom's house.

And flexible to boot. Mom says use whatever leafy green you happen to have. 

I've used, spinach, choy sum and ung choy. 

Mom is partial to ung choy and watercress. 

Taste good warm or cold.

1-2 bunches of ung choy
 (Or choy sum, mizuna, watercress or American spinach)
1t sesame oil
1T shoyu
2T mirin
1t oyster sauce
1/2t sugar

Boil water and add 1t sesame oil. Drop in ung choy for 1 minute, or until it is just wilted. This will happen faster with spinach. Rinse and drain with cold water. Squeeze out excess water. Bundle them up and chop into 2-inch segments. Mix sauce ingredients together and pour over.
