spicy turkey burgers

We all love hamburgers, but are trying our darn-best to eat less cow. So Todd found this great one for uses chili spices to add to kick. And it got four thumbs up from the merciless in-house family rating system.

Equally good with "American" condiments--catsup, mustard, pickles, tomato, onions, etc., or Tex-Mex style with salsa and guacamole.

1 package of ground turkey, dark meat
2 poblano chiles
1-2 handfuls of dry bread crumbs (we use sourdough or asiago bread)
1/4 cup milk
1/4 t chili powder
1t cumin
Hawaiian salt and pepper to taste
1/4 t cayenne pepper

Grill chiles, seed and dice. Add milk to breadcrumbs and let it sit for 5 minutes or so. Mix everything together. Make into patties and grill.
