tandoori chicken sandwiches

Early in our marriage, my husband cooked, pretty much exclusively. I was working long hours at start-up and couldn't cook. At all. What a difference many years make. However, my husband remains a fabulous baker and a great cook. He found this very fast, easy, spicy winnner

2 packages of chicken tenders
1/2 cup of plain yogurt
1T fresh ginger, very finely chopped
2-3 cloves of garlic, finely chopped
1/2 t cayenne pepper
1/4 t turmeric
3T olive oil
Hawaiian salt, to taste
Sandwich Items
Flat bread (naan or pita)
Red onion, very thinly sliced
Sliced tomatoes
Lettuce

Feta cheese

Whisk together yogurt, spices and oil. Dump the chicken in and let in marinate for at least 20 minutes. Grill.

Make sandwiches, adding your favorite condiments. Use any leftover yogurt as you would mayonnaise for a sandwich.
