sweet po's and peachy catsup (vegan)

The same colleague who gave me a great Spanish Rice recipe also sent this one. Everyone knows I adore french fries that are absolutely drenched in catsup.
This is a great variation on a theme, especially in the summer when peaches and 'cots are in peak season. You can also use roasted russet potatoes, but the catsup works best with a combination of orange and white sweet potatoes. |
Grilled Sweet Potatoes
Sweet potatoes, washed and cut into wedges Olive oil Hawaiian salt Fresh cracked pepper |
Peachy Catsup
1 very ripe peach or 2 apricots, pitted, skinned and squished up 1/4 cup of Heinz catsup, my personal favorite 1-2T shoyu About 1/4t ground ginger, or a little more to your taste |
Put potato wedges into a bowl. Drizzle enough olive oil to coat all sides of the potato wedges. Lightly salt and pepper. Grill closed until slightly browned and the wedges are slightly crispy on the outside but soft on the inside. Unlike brown potatoes, sweet potatoes do not get as crispy a 'skin' and need to be well cooked to bring out the full sweetness.
Alternately, bake at 350 degrees for about 45-60 minutes on a Silpat mat. Flip the potatoes at about the 30 minute mark if you remember. This will help get some crunch on the potatoes.
Pit and skin the peach or apricots. Use your hands to squish the meat of the fruit into a small pan. Use your fingers to smash up the larger pieces as much as possible. Add the catsup, shoyu and ground ginger. Stir and slowly heat just to a bare boil and turn off. This takes about 3-5 minutes so you can do this as soon as the potatoes are done.
