Ingredients

A hunk of pork butt, bone or boneless is fine, 4 lbs or so 
4T Liquid Smoke
2T Hawaiian salt, (ideally the red kind)

What To Do

Rub liquid smoke and salt all over the pork butt. It will look like it will be incredibly dry when you first put it in the crock pot, but don’t worry. 

Put it in the crock pot and cook on high for 6 hours or low for 10-12 hours.

It really is that simple. You’ll get the tender, moist, “broke the mouth” flavorful meat.

  • Kalua pig is freezes well and lends itself to a variety of full-blown meals masquerading as leftovers. Because it has a strong-to-salty flavor, it pairs well with mild vegetables like cabbage, creamy Monterey Jack, or light salsas.
  • Leftovers' Roulette 1: Kalua Pig and Cabbage
    ​1 head of cabbage, sliced very thinly, like coleslaw
    Leftover Kalua pig
    A bit of Kalua pig fat/juice
    Sriracha as a topper, (optional)

    Heat up the Kalua Pig in a wok or stir-fry pan. Add a little of the fatty stuff. Toss in the cabbage and stir until the kalua pig is warm and the cabbage is wilted.

    Server over hot rice, add some Sriracha if you like. Eat and be happy that you are getting protein, rice and a vegetable in every mouthful.​​

  • Leftovers' Roulette 2: Kalua Pig Quesadillas
    Flour or corn tortillas
    Shredded lettuce, arugula, or baby spinach
    Tomatoes, chopped or fresh mango or pineapples
    Shredded mild Monterey Jack Cheese

    Optional Condiments
    Tropical Fruit Salsa or Fresh Corn Salsa
    Laurie's Guacamole
    Cilantro
    Heat kalua pig in the microwave til it is just warm and juicy. Warm one tortilla on a non-stick pan. Layer cheese, kalua pig and a second tortilla. Flip when the bottom tortilla gets brown or the cheese starts to melt. Let the 2nd tortilla brown. Transfer to a plate and let sit for a few minutes. Cut into quarters, top with condiments of your choice.
  • You can also go Tik-tok style and fold over the condiments in the tortilla.
