Stuffed Tuna Melts

Tuna melts are one of my favorite warm sandwiches, with lots of options to customize to your taste!

PSA: Uses a non-stick pan and an optional panini weight. Or the toaster and a microwave!

Ingredients

1 can of tuna (in water) drained
A few handfuls of shredded carrots
About half a red pepper, finely diced
Just enough mayonnaise to hold everything together, maybe two spoonfuls

A shot of red wine vinegar

Slices of extra-sharp cheddar cheese, or your favorite melty cheese slice

​Optional Mix-ins to tuna mixture
About ½ a red or sweet white onion, very finely, chopped
1 stalk of celery or a handful of waterchestnuts, also very finely chopped, for a crunchier texture

Your favorite sliced bread
 1-3T butter

Accessories (recommended but all optional)
Arugula or fresh spinach
Sliced tomatoes

Sliced avocado

What To Do

Mix tuna, carrots, diced red peppers, mayonnaise together. Add vinegar and taste. If it's too sharp, add a bit more may.

To assemble sandwiches tack the ingredients in this order on top of the bread slice #1:
1) Cheddar cheese #1
2) Arugula
3) Tuna mixture
4) Tomato
5) Avocado
5a) Optional cheddar cheese slice #2

5) Bread slice #2

Heat a small non-stick pan and melt about 1T of butter. Carefully place your composed sandwich into the pan, moving slight to catch as much butter as possible. Using a spatula, gently press down on the sandwich so that as the cheese melts, the arugula will also soften and 'stick' to the tuna mix.

Once bread slice #1 is nicely browned to your liking, gently remove and set aside on a plate. Melt another tablespoon of butter in your pan, and gently place your sandwich for bread slice #2 to be browned and melty. 

Eat while warm.

Notes and Talking Story

  • You can also opt for using the toaster and microwave.
  • Simply toast the bread, assemble the sandwiches as above and put the entire sandwich is the microwave for 20-30 seconds, just enough to melt the cheese.  It will be a little less crispy than the butter-in-the-pan method, but super fast.​
  • ​If you are using only one slice of cheese, make sure that the bread slide that is closest to the cheese (i.e. bread slice #1) is on the bottom of the pan. so once to brown the bread slice #1. 
  • Including carrots, red peppers, arugula, tomatoes and avocado is a easy way to bling up an ordinary tuna sandwich
  • As a bonus, the shot of vinegar eliminates the need to added salt, and the arugula adds a peppery kick.
