Karen's Mom's Seven Layer Bars

One of my best friends and roommate from college got these in care package about once a month.

It was cause for major celebration when we saw the coveted shoe box packed with a foil-wrapped brick of these tasties.

Ingredients

1 block of melted butter (½ cup)
1 
½ cups graham cracker crumbs
1 cup walnuts, coarsely chopped
½ cup of bittersweet chocolate chips

½ cup of butterscotch chips
1 ⅓ cup unsweetened flaked coconut
1 can sweetened condensed milk (15 ounces)

What To Do

Pre-heat oven to 350°F.

​Spread melted butter uniformly across the bottom of a 13 x 9 pan. Sprinkle graham cracker crumbs evenly on the bottom of the pan. Sprinkle nuts, chocolate, and butterscotch morsels, and then coconut. Pour milk over the top. Bake at 350 degrees for 25 minutes or until lightly browned on top.


Cool 15 minutes and cut into squares. Aluminum foil optional.

Notes and Talking Story

  • Exactly 7 ingredients, no mixing, and it works every darned time.
  • Even better, if you buy pre-smashed graham cracker crumbs, all you need is a can opener.
  • I usually buy a box (14.4 ounces) of graham crackers. One packet of graham crackers yields the required 1 ½ cups. Then you have spare graham crackers in case of s'mores or cheesecake cravings.
  • I put the graham crackers into a Ziploc bag, and then use a little-kid wooden hammer to crush the graham crackers into smithereens/crumbs. It's fun and therapeutic.
