Todd’s Pecan Pie

This is the requested and required pie indulgence at Thanksgiving and Christmas.

Two of them. Each holiday, from now until eternity.

What a way to finish dinner. Just exercise a lot afterwards.

PSA: Ideally, make your pie crust in advance.

Ingredients

Todd's A+ Pie Crust

​
3 eggs, slightly beaten
1 cup white sugar
1 cup Karo dark or light corn syrup
2T butter, melted
​1t vanilla
1 ¼ cup pecans, halved


What To Do

Plan accordingly and make the pie crust dough. Roll out pie crust and press into bottom of pie pan.

Pre-heat oven to 350°F.

​In a large mixing bowl, stir first 5 ingredients until sugar is dissolved and all are well-blended. Stir in pecans.

​Pour into the UNCOOKED pie crust. Bake 50-55 minutes, or until a knife comes out clean. Cool slightly a wire rack.

​Serve warm with whipped cream or ice cream and hot coffee. 

Notes and Talking Story

  • This is an old-school recipe that uses corn syrup, which is not so fashionable these days. However, for just two times a year, we splurge. 
  • ​Microwave 15-20 seconds if you are lucky enough to have any leftovers.​
