Kal Bi Beef
SKU:
My son will make an exception to his no-cow rule for. Beef short ribs or ribeye steak, and grilling are best for this.
Ingredients
3 lbs beef short ribs, cut Korean/Hawaiian-style
|
Marinade
½ cup shoyu 2-3T sugar 1T sesame oil 1T toasted ground sesame seeds 1 bunch of green onions, chopped 2-3 cloves garlic, smashed Black pepper to taste |
What To Do
Mix everything together. Marinate overnight. Grill.
Serve plate-lunch style with macaroni salad, hot rice, kim chee and a nice green salad. Ono!
Be happy and clean 'em to the bone.

Notes
You can also make this marinade with chicken, but it is definitely a second option. And if you are desperate to eat this, but you live where there is snow on your grill, you can also opt for using the oven.
Elevating Leftovers
Kal Bi StackupsLeftover Kal-bi, torn from the bone
Yaki Musubi Won Bok Coleslaw Split the yaki musubi in half to make flat platforms, like a slice of bread. Tear a segment of meat from the bone, place it on a flat side of the musubi, and microwave for 20 seconds. Top with leftover Won Bok Coleslaw. |
Kal Bi QuesadillasLeftover Kal-bi, torn from the bone
Tortillas A spoonful of mayonnaise A small swirl of sesame oil About 1T of shoyu Shredded lettuce and carrots (optional) Mix mayonnaise, sesame oil and shoyu to your taste. I just enough sesame oil so that it smells good. A little goes a long way. Spread the shoyu/sesame/mayo sauce on one half of one side of the tortilla (i.e., in a half-circle) Remove the meat from the bone and place it on the spread side. Add shredded lettuce and carrots (or not!), fold in half, and eat cold. If you want to be fancier, grill on both sides until is is golden brown and crunchy. You can also do Tik-Tok style and fold it over and grill. |
