sticky rice with mangoes

Thank you to my friend and seriously amazing baker Christine for this winner. A very easy dessert that can be made in my favorite household appliance--the rice cooker. 

Please also know that this photo completely undersells it. The picture is worth maybe 15-20 words compared to the real thing

For the cup measurements, use actual measuring cups, rather than the smaller rice cooker cups.

1 1/2 cups sweet Jasmine rice
3/4 cup water (about)
1 can of coconut milk
1/2 cup of sugar
1/2 teaspoon salt
2 ripe mangoes, cubed (or lychee or pineapple)

Touch of fresh mint or squeeze of a lemon

Cook the sweet jasmine rice in the rice cooker.

Combine coconut milk, sugar and salt. Boil for about 3 minutes, stirring constantly. Remove from heat. As soon as the rice cooker indicator shows the rice is done cooking, add the hot coconut milk/sugar sauce to the cooked rice in the pot. On my very simple rice cooker, the LED indicator simply clicks from "cooking" to "warming." Aim to pour the sauce in as soon as it switches over.

Stir until mixed. It will look very soupy. Don't worry, it will get absorbed. Close the rice cooker and let it sit for about 30 minutes so the rice absorbs the coconut milk sauce

Spoon rice into dishes and add mangoes. If you want, garnish with mint or a squeeze of lemon. The lemon brightens all the flavors and adds a little 'zing' to it.
