sick & wrong fish

Picture
Don’t be fooled by the title; this is really, really good. However, the first time mom made it for my kids, it was as a whole fish--steamed with head, eyeballs, etc. My son then exclaimed, “That looks sick and wrong!” and proceeded to eat it anyway. While the name stuck, we use fillets now.

Fish options
(Fillets avoid the "sick and wrong" moniker)
Opakapaka
Halibut
Moi
Kumu
Mullet
Shoyu
Sesame oil
Fresh ginger, grated
Cilantro, finely chopped

1-2 stalks of green onions, finely chopped

Sprinkle the shoyu and sesame oil over the fish. Sprinkle fresh ginger, green onions, and cilantro in proportions to your liking. Wrap fish loosely in aluminum foil (like a tent) and bake at 350 degrees for about 20-30 minutes, depending on how thick the fish is.
