sam choy's coconut bread pudding

Todd and I had this at Sam Choy’s on Nimitz in Hawaii. You can make it to taste just like the restaurant. This is what makes Sam Choy recipes so nice.

It’s roll-your-eyes-in-the-back-of-your-head good! And as a bonus, Todd says it’s really easy to make.

3 eggs
3/4 cup sugar
4 cups milk
6T coconut milk

8 cups of cubed bread, 1/2” cubes (A crusty sweet French works nicely)
Optional Add-ins
Coconut syrup (this is like pancake syrup)
1/2 cup toasted macadamia nuts
1/2 cup toasted unsweetened coconut flakes (fresh if you can find it.)

Whisk eggs and sugar. Add milk and coconut milk. Mix. Layer bread, nuts, and coconut flakes in a 13” x 9” pan. Pour eggs-stuff over and let it soak in a bit. Bake at 325 degrees for 45 minuts-1hour, or until a toothpick comes out clean. Drizzle coconut sauce, whipped cream, macadamia nuts, and coconut over it. 

Drizzle with your favorite toppings of coconut syrup, whipped cream, macadamia nuts and toasted coconut. Serve warm.
