salmon cakes--my own

This is a completely made up recipe that I cobbled together many years ago. It is now my go-to way to use leftover Easter salmon. 

1-2 cooked salmon piece, no skins
1 shallot, finely chopped
1 red pepper, finely chopped
Dill, just enough to taste and smell
Parsley
Fresh cracked pepper
3-4 handfuls of panko
2-3 spoonfuls of mayonnaise
1-2 squeezes of mustard
2-3 handfuls of Parmesan cheese, grated
Canola oil, for cooking
Flake salmon and mix all ingredients together. It should be the consistency of tuna salad.Adjust the spices to your taste. I usually don't use salt because the other spices flavor it deeply.

Drizzle canola oil (very little) into a non-stick pan. Form into patties and fry until browned on one side. Flip once to brown the the other side. Drain on paper towels.

NOTES:
1) This works really well as a spread for crackers.
2) These patties give off very little oil/fat compared to hamburgers or even turkey burgers.
