romescu chicken sandwiches

My boss found this recipe and called it "Weird Bread Sauce" chicken.  He made them as kebabs, but I opted for sandwiches so that I could make the loaf of bread part of the meal.

1 package of boneless/skinless chicken thighs
1 bunch of fresh cilantro, chopped
Juice of a lime
3-4 cloves of garlic, finely chopped
2t paprika
¼ cup olive oil
Hawaiian salt and black pepper, to taste
Balsamic vinegar, to taste
A few slices of your favorite very crusty bread, toasted and cubed
  (ciabatta, asiago cheese, pugilese, etc.)
A handful of hazelnuts or pine nuts
3-4 pieces of roasted red peppers
Lettuce

Toss chicken with about 2 T of olive oil, cilantro, lime juice, about half the garlic, paprika, salt and pepper. Let marinate for about 30 minutes. Put bread, the rest of the garlic, roasted red peppers, vinegar and nuts into a food processor. Process to a kind of a paste, then drizzle in olive oil until you get a thickish orange sauce that's almost the consistency of hummus.

Grill or bake chicken. Slice the rest of the bread. Spread sauce over bread and add cooked chicken and lettuce.
