ridiculously good scones 2

Picture
Like father, like son. My young son was lucky enough to get into cooking class in middle school, and he came up with yet another ridiculously good, and ridiculously easy recipe for scones. Best of all, since it's middle school, they have only about 35 minutes of class to do this, including baking. These are a slightly different texture Todd's scones, but fab nonetheless. Thank you Cupertino Middle School.

1 3/4 cup flour
1/4 cup sugar
2 1/4 t baking powder
1/2 t salt (white)
1/2 t cinnamon
1/4 cup cold butter
1/3 cup milk
1 egg

Mix all dry ingredients in a bowl. Cut butter into the dry ingredients until you get coarse crumbs. In another bowl, mix together egg and milk. Make a hole in the dry ingredients and pour egg/milk into a bowl. Mix until the dough just comes together. Flour a counter or pastry board and knead gently 15 times. Make dough into a circle and cut into wedges. Brush with a little milk and sprinkle with sugar.

Bake at 450 degrees on parchment paper or a silpat mat for 10-15 minutes, or until golden brown. Eat warm.
