nutella ice cream sandwiches |

The idea for this came from sitting a coffee table magazine I was flipping through at the kids' dentist. That recipe took either six hours or three days. This one takes 10 minutes and has pretty close to infinite variety. Choose a different cookie, vary the ice cream flavor, switch up Nutella with peanut butter or jelly. I love recipes that put you in control, and here are some variations I like.
Nutella & Coconut Caramel Flan Ice Cream This closest to the original "Salted Caramel Nutella Ice Cream Sandwiches" production of a recipe from the magazine. Peanut Butter & Chunky Monkey Ice Cream Peanut butter and banana ice cream with bits of chocolate and walnuts. Nutella & Vanilla Simplicity. |

2 Diamond Bakery Royal Creem Crackers
or Pepperidge Farm Gingerbread, Lemon or Coconut cookies |
Spread an even layer of Nutella over the flat of each cookie. Use the melon baller to portion out a bit of ice cream. Shape with parchment or saran wrap. Re-freeze and eat when you are good and ready.
NOTES:
1) Royal Creem crackers are my preferred choice because they are only slightly sweet and very crisp. Because everything else is sweet, it's good to have a not-too-sweet cracker.
2) It's also good to use a smaller cracker. As you can see, three little ice cream sandwiches are about 4 inches total.
3) A tablespoon will work if you don't have a melon baller.
