nutella ice cream sandwiches

The idea for this came from sitting a coffee table magazine I was flipping through at the kids' dentist.  That recipe took either six hours or three days. This one takes 10 minutes and has pretty close to infinite variety. Choose a different cookie, vary the ice cream flavor, switch up Nutella with peanut butter or jelly. I love recipes that put you in control, and here are some variations I like.

Nutella & Coconut Caramel Flan Ice Cream

This closest to the original "Salted Caramel Nutella Ice Cream Sandwiches" production of a recipe from the magazine.

Peanut Butter & Chunky Monkey Ice Cream
Peanut butter and banana ice cream with bits of chocolate and walnuts.

Your favorite ice cream
2 Diamond Bakery Royal Creem Crackers
  or Pepperidge Farm Gingerbread, Lemon or Coconut cookies

Royal Creems are just the right size.
Spread an even layer of Nutella over the flat of each cookie. Use the melon baller to portion out a bit of ice cream. Shape with parchment or saran wrap. Re-freeze and eat when you are good and ready.

NOTES:
1) Royal Creem crackers are my preferred choice because they are only slightly sweet and very crisp. Because everything else is sweet, it's good to have a not-too-sweet cracker.

2) It's also good to use a smaller cracker. As you can see, three little ice cream sandwiches are about 4 inches total.

3) A tablespoon will work if you don't have a melon baller.
