not lemongrass vietnamese chicken

A riff on Thai/Vietnamese chicken. No lemongrass, but still using coconut milk and the paradoxically delicious yet stinky fish sauce.

Boneless skinless chicken thighs
4-5 cloves of garlic, peeled
2-3 shallots, also peeled
1/2 cup coconut milk
3T Japanese vinegar
3T fish sauce
3T shoyu
3T brown sugar

Put everything except the chicken in the blender or food processor and mix until it makes a smooth marinade. Pour into a glass bowl and marinate chicken for at least 30 minutes, and even overnight if you like to plan ahead.

Grill.

NOTES:
