myles' last resort meatloaf--graduate version |

Myles was my husband's college roommate. When they were both learning how to cook, Myles came up with this winner. We've eaten this for years, and gradually, I've updated a little here and there so that it doesn’t look so much like ‘dorm food.’
However, if you are in a hurry, leave out the layers of onion and mushrooms, and just chop everything up, mix together, dump it into a pyrex pan, pour the sauce over, and bake. Taste is the same—the layered version is just ‘prettier.’ When we have it, we also use Aunty Lilikoi's Passion Habanero Mustard, but plain old hot dog mustard works just fine. |
1 package hamburger, ground chicken, or ground turkey
½ an onion, finely chopped ½ a bag of shredded carrots ½ container of mushrooms, finely chopped 1 egg 4 slices of bread, toasted, then crumbled Salt and pepper to taste The other ½ container mushrooms, sliced The other ½ of the onion, thinly sliced into semi-circles |
Sauce
½ cup catsup ½ cup water 1T Worcestershire sauce 2T brown sugar 3-4 good squeezes of your favorite mustard |
Mix ground meat, finely chopped onions, carrots, mushrooms, egg and bread crumbs together. Mix the sauce together. Put a layer of sliced onions on the bottom of a 9 x9 baking dish. Spread the meatloaf mixture evenly over this. Pour the sauce over the meatloaf. Put a layer of sliced mushrooms over the meatloaf. Bake at 350 degrees for about 45 minutes.
