Thank you Huli Sue's in Waimea (Big Island) for the inspiration!

Huli Sue's is a funky roadside bbq place in Waimea. If Merriman's is the rock-star restaurant for a "dining experience," Huli Sue's is your best friend's down-home place where you go to "eat good." They do a Tex-Mex meets paniolo kind of food. The sauces reflect this--crackseed and paniolo-chipotle.

Just remember, a little li-hing goes a LONG way.

1 package of boneless/skinless chicken thighs
1t li-hing powder
1/3 cup of our favorite "neutral" bbq sauce in a jar
(I used KC Masterpiece Mesquite)

Mix li-hing and bbq sauce. It will turn a brighter reddish color. Marinate the chicken at least 30 minutes. Grill.

NOTE:
1) Measurements are close. Taste as you go along and be conservative with the li hing powder.
