laurie's plate lunch cutlet

My mom always uses Corn Flake crumbs, but I prefer the flavor and texture of Total a little better. Very good with rice, kim chee and macaroni salad. And it’s darn near-perfect beach food.

1 package flank steak
2 eggs, plus a little water
Total or Corn Flakes—smashed up in a blender
Canola oil
Garlic salt
Pepper, to taste

Thinly slice meat against the grain. Scramble eggs together with a little water. Mix together cereal crumbs, garlic salt and pepper in another bowl. Dip meat in egg, then coat with cereal mixture.

Pour a thin layer of oil to coat the bottem of a pan. Cook until nicely browned, flip and brown the other side.
