kathy's chicken salad

Kathy was my life-saving “buddy mom” when my daughter was in Kindergarten. Her original recipe required making dressing. With real buttermilk. Buttermilk!?  No. I like to think this is the ‘expedited’ version, so I substituted the ranch dip. Sorry, Kathy!

Cubed cooked chicken
1-2 stalks of celery, finely chopped
Red seedless grapes, halved
Cashews
Celery (optional—and I opt out)
1-2 spoonfuls of Nancy’s Ranch Dip or your favorite Ranch dressing

2 dollops of mayonnaise
A bit of fresh dill

Mix cooked chicken, celery (if you must), grapes and cashews in proportions to your liking. Mix ranch dip and mayonnaise. Add just enough to hold everything together. Chill for ½ hour so that the flavors mix.

Eat in tortillas like a wrap, or in lettuce cups.
