jeri's baked salmon

Jeri is one of my dearest friends, from 9th grade in Hawaii, many moons ago. She and her family now live in Seattle, salmon capital of the world. She made this up when we were in college, and she most definitely doesn’t measure either. 

If you don’t have panko, you can use wheat germ, regular breadcrumbs, or even smashed up croutons. If at all possible, avoid using Corn Flake, Total or other cereal crumbs. Normally these are good substitutes, but for whatever mysterious cooking reason, they just don’t work here.

1 salmon fillet (not the Costco behemoth size!)
2-3 dollops of mayonnaise
1/4 cup Parmesan cheese  (I use one handful)
1-3t dill, to taste, adding slowly
About a handful of panko

Mix mayonnaise, Parmesan cheese, dill and panko together to make a paste. Coat salmon. Bake skin-side down at 350 degrees for about 30 minutes. The Parmesan cheese and panko will from a crust to the top of the salmon.

NOTE: Dill is very powerful, so add in small increments until you get the intensity you like.
