jane's napoleons

Jane is my friend Lori’s mom. She’s a really good cook, an even cooler person, and Jane looked after me when I was at Brown. This is my favorite kind of recipe because of its incredible flexibility. You can use almost any kind of summer fruit-berries, plums, peaches.

Some other combinations that work nicely
1. Chocolate pudding and fresh cherries with toasted almonds and powdered sugar on top
2. Lemon pudding with fresh raspberries 


Add whipped cream on the top if you want to be really extravagant.

Pepperidge Farm Puff Pastry-1/2 package
1 small box instant vanilla pudding
Various berries (strawberries, raspberries, blueberries)

Cut the pastry into thirds along the fold marks. Bake according to the box. Let cool thoroughly. Make pudding and let it soft-set. 

To assemble, put one pastry on bottom layer. Use the back of the spoon to make a small trough for the pudding. Put 1/2 of the pudding in. Add berries. Put the second piece of puff pastry on. Repeat pudding and berries. Top with the last pastry.
