jane's baked scallops

When I visit my Rhode Island ohana, I get spoiled with fresh bay baby scallops.

Since I am allergic to crustaceans, this is how I get my seafood fix.

I'm told it's very, very important to rinse the scallops and to try to find the small pink ones as they are sweeter.

About a half-pound of baby scallops
Hawaiian salt and pepper
About 1/4 of a green pepper, finely chopped (optional)
4T melted butter
About 1/2 cup of bread crumbs or
about 1/2 cup crushed Ritz crackers

Rinse the scallops very well, to get all the slimy stuff off and pat them dry with paper towels. Jane says this is very important. Put the scallops into a shallow baking dish and don't let them overlap too much. Salt and pepper a little bit.

Melt butter in a small bowl and add the bread crumbs and finely chopped green pepper if you are using it.

Sprinkle butter/bread crumbs/green peppers mixture over the scallops. Bake at 350 degrees for about 30 minutes, until the bread crumbs are golden brown and crispy.
