from scratch falafel

Especially good for the “I don’t feel like cooking” days because the food processor does all the chopping! Everything you could want in a weekday dinner, and meatless to boot.

1 can garbanzo beans (white)
1 large onion, chopped
6 cloves of garlic
Fresh parsley, to your taste (I like a little bit)
Fresh cilantro, to your taste (I like a lot, half a bunch or so)
2t cumin
2t coriander
Juice of a lemon
A good handful or so of breadcrumbs—green onion, panko, sourdough, or your favorite
Hawaiian salt and black pepper, to taste
Hot pepper sauce, to taste (Sriracha or your favorite)
Canola oil, for frying
Dipping Sauce
Plain yogurt

Cucumbers, finely sliced
Hot pepper sauce to taste
A little lemon juice

Recommended Accessories
Pita bread
Lettuce
Tomatoes
Cucumber slices

Put everything (except dipping sauce ingredients) in a food processor until it is the consistency paste. If necessary, add a bit of water to hold things together. Form little balls or patties. Fry in oil until brown and crunchy crust forms. While spheres are the traditional shape, patties use less oil.

Mix yogurt, remaining lemon juice, cucumbers and hot sauce.
Eat with yogurt sauce, and pitas, lettuce, tomatoes and sliced cucumbers.
