fifteen minute fish

Fish is one of the easiest and fastest meals to make on the week day. You can make this in one pan in about 15 minutes. You will be finished in a shorter time than it took me to type it out.

Butter, almonds, lemon and parsley can dress up any fish, and using sole in particular is very, very fast. If you are really rushed for time, pick up a bag of salad and some bread on your way home and you'll have a nice civilized dinner. Even when it's your turn to drive carpool.

Dover or Petrale sole
Halibut will also work

Olive oil
Flour
About 4T butter
Juice of 1 lemon
Fresh parsley
Almonds, slivered or sliced

Hawaiian salt and pepper, to taste

Toast almonds in a a non-stick pan until golden brown. Take them out and set them on a plate. Sprinkle fish on both sides with salt and pepper. Dredge in flour. Drizzle olive oil onto a non-stick pan and heat so that the pan is hot but not smoking. Cook fish about 2 minutes per side and flip once. Drain on paper towels on a plate.

Clean out the pan with a paper towel (There will likely be burnt flour and oil still in the pan). Melt butter, squeeze the lemon juice and dump in the parsley and toasted almonds. Cook until well-mixed and spoon over the fish.
