summer winter wheat berry salad

No one ever goes hungry at our 4th of July potlucks. And we all come away with new recipes. This is from my fried Christine, of Christine's Clam Chowder fame.

A hearty, flexible grain salad, similar to quinoa salad. Wheat berries are almost like barley, but have a good texture to them. 

Christine says as a recipe, it's a little 'loosey-goosey' and typically, she uses whatever happens to be on hand.  These are the best kinds of recipes.

1 cup winter wheat berries, available at Safeway
3 cups water
1 can of corn
1/4-1/2 cup craisins or diced tomatoes
1/2 cucumber, seeded and diced
1 can black beans, rinsed and drained
4 oz. feta  cheese
1/4 cup roasted sunflower seeds
Red or green onion, finely diced/sliced
Your favorite vinaigrette dressing
Italian parsley, chopped

Cook the wheat berries in 3 cups of water for 1 hour. Drain and cool. Add all other ingredients. Done!

Mexican variation

Swap cilantro for parsley
Swap salsa for vinaigrette
Swap Pepper Jack for feta
Add diced avocado tomatoes right before serving
