bbq chicken pizza

We've been eating this for a long time now, and I'm happy to see it's become the trendy pizza 'o the day. Another meal that is just so easy that you can banish the CPK or Wolfgang puck frozen version.

1 Boboli whole-wheat pizza crust
1 small jar of your favorite bbq sauce (I like a hickory smoke)
A few handfuls of leftover cooked chicken
A splash of olive oil
1 red onion, sliced into thin rings
1 sweet red pepper, cut into strips
Gouda or smoked gouda cheese, shredded

Heat oven to 350 degrees. Splash oil into a pan and saute onions until they become limp and almost carmelize. Spread bbq sauce over pizza crust. Sprinkly chicken, onions and peppers over the sauce. Top with gouda cheese, as much or as little as you like. Bake at 350 for about 20-30 minutes, or until the cheese melts.
