A nice variation on cherry salad. There’s a whole sweet-salty-sour taste action, as well as a crunchy-meaty- squishy texture going on.
This salad doesn’t keep very well, so store the cashews, bleu cheese and wonton chips separately if you are planning for leftovers.

Romaine or red-leaf lettuce
Cooked chicken Bleu cheese Honey roasted cashews or peanuts Strawberries, thinly sliced |
Dressing
Juice of ½ a lemon Teeny splash of rice vinegar 2-3T sugar—more if the lemon is really sour Canola or Macadamia Nut oil, just enough to hold together. |
Combine salad items in proportions to your taste. Mix together lemon juice, vinegar and sugar, adjusting the sugar to your taste. Whisk oil in slowly so it gets incorporated well. Drizzle over salad and eat!
