fresh corn salsa (vegan)

Nothing beats fresh corn.   

And while canned corn is useful in things like Spanish rice or tortilla soup, it will not work here. Don't even think about it.

This 'salsa' is great with Kalua pig, really any kind of pork, or as part of fish tacos.

3 fresh ears of corn
1/2 red onion, finely chopped
1-2 jalapeno peppers
Juice of 2 limes 
  or one lemon if you are in a pinch
At least two handfuls of cilantro, finely chopped
Hawaiian salt, to taste

Grill or cook corn and cool. Cut the corn off the cob. Dice everything else together and mix. Add salt to taste. If possible, let it sit for 30 minutes or so to let the flavors mix and soak in.
