edamame rice
(can be vegan)

Last time I was at home in Hawaii, my mom made 'maze-gohan' (mixed rice). Here is my own version, a little less salt, and a little bit of carrots to bring some sweetness, color and crunch in. By all means, make use of absolute convenience of packaged and shelled edamame!

Makes a nice backdrop to misoyaki butterfish (pictured at left) or tonkatsu.

2 (rice cooker) cups of cooked Japanese (or white/brown) rice
1 bag of shelled edamame
About half a bag of shredded carrots
Nori (seaweed) <--For VEGAN version
 or tamago (egg) furikake

Cook rice in rice cooker. Dump all of the hot rice into a serving bowl. Microwave edamame and mix with rice. Mix in shredded carrots in proportions that you like. Sprinkle furikake and mix together to taste.
